Christmas Cookies For Santa

With Christmas fast approaching, I thought this would be a great time to get your ingredients together for Santa’s cookies!  Although these are not paleo, they are gluten-free.  To make them dairy-free, be sure to get some dairy-free chocolate chips and earth balance as a butter substitute.  While you’re at it, pick up some cardstock to print a Dear Santa card to go along with the cookies for Santa.

Cookies for Santa

Perfect for any occasion, these chocolate chip cookies will be a hit!

Ingredients

  • 2 1/2 cups of Gluten-Free 1 to 1 baking flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup of earth balance-softened
  • 3/4 cups sugar
  • 3/4 cups of brown sugar
  • 1 tsp vanilla extract
  • 1/4 cup of strong brewed coffee
  • 2 eggs
  • 2 cups of dairy-free chocolate chips

Instructions

  1. Preheat oven to 375 F. Line two baking sheets with parchment paper
  2. Mix flour, baking soda, and salt in a small bowl.
  3. In a larger bowl beat butter, sugar, brown sugar, vanilla, and coffee. Mix until creamy.
  4. Add eggs, one at a time to the creamy butter mixture.
  5. Gradually add flour mixture, beat until well blended.
  6. Stir in chocolate chips.
  7. Scoop dough out into balls (2 tbs. each). Place two inches apart on baking sheets.
  8. Chill for 20 minutes.
  9. Bake for 11-13 minutes until golden brown.
  10. Cool on baking sheets for 5 minutes then transfer to rack.

Notes

Adding the coffee is optional, but highly recommended. One cup of chopped nuts will give the cookies a fun texture as well as 1 cup of crisp rice cereal.

Did you know that the chocolate chip cookie was invented by Ruth Graves Wakefield and Sue Brides in 1938? I can only imagine the magical delight of the first finished cookie.  I’m going to guess chocolate chip cookies are the most popular cookie ever!

These cookies are also a fun treat to bring to your holiday party.  I know I’ll be making several batches to give away on cute cookie platters.  You can easily substitute the chocolate chips with nuts or dried fruit.   I love that the base of this recipe is very versatile!
